Smoked Duck Salad
Ingredients
550 g/ 1¼ lb smoked duck, finely sliced
6 radishes
200 g/ 7 oz corn salad
1 box mustard and cress, snipped
150 ml/ 5 fl oz olive oil
60 ml/ 2 fl oz white wine vinegar
Salt

Serves: 6
Method
Smoked duck is available from most good delicatessens. Cut the radishes to form flowers.
Arrange the duck slices on each plate in the shape of a fan. Garnish with the vegetables. Make a vinaigrette with the oil and vinegar and season with the salt. Use to dress the duck and salad vegetables.
