Apple-Pear Tart

Ingredients

FOR THE PASTRY:

¾ cup (175 ml/100 g) flour
1 tsp (5 ml) sugar
⅓ cup (75 ml/70 g) butter
1 egg yolk
Salt

FOR THE FILLING:

1 large apple
1 pear
1 egg yolk

FOR THE GLAZE:

1 tbsp (15 ml) apricot jam

Serves: 10


Method

Knead together flour, sugar, butter, egg yolk and salt to form a smooth dough. Wrap in plastic wrap and refrigerate for 1 hour.


Preheat the oven to 350°F (180°C). Grease an 8 inch (20 cm) springform pan. Roll out the dough so it's slightly larger than the pan and line the pan and a bit up the sides with it. Peel, core and slice the apple and pear and arrange in a fan­like formation on top of the dough. Brush with the egg yolk. Bake for 1 hour.


Warm the apricot jam with a little water, stirring, and brush on the tart while still hot. Cut into 10 pieces and serve.
