Mango Ice
Ingredients
1 can (20 oz) mangoes
Pared rind and juice of 1 lemon
4 tablespoons granulated sugar
¼ pint water
Method
Drain the syrup from the mangoes into a measure and set aside. Then crush the mangoes well with a fork.
Note: if wished, reserve some of the mangoes for decoration.
Put the pared rind of the lemon into a pan with the sugar and water. Bring slowly to the boil and boil for 3-4 minutes (this should give 7½ fl oz sugar syrup). Add the strained juice of the lemon, remove the rind and pour this liquid into the measure containing the mango syrup. Stir in the crushed mangoes. (There should now be about 1½ pints in all.)
Chill this mixture thoroughly, then pour into ice trays and put in the freezing compartment of the refrigerator. Leave for 2-3 hours, stirring well occasionally. Serve in coupe glasses; if wished, top each with 1-2 pieces of reserved mango.
