Beetroot Salad
Ingredients
4 fresh beetroot
1 hard-boiled egg, shelled and chopped
Salt
2 tbsp olive oil
2 tsp vinegar

Serves: 4
Method
Cook the beetroot until tender and set aside to cool.
Peel and slice the beetroot. Arrange it on a serving dish and pile the chopped egg in the centre. Season with salt and add the oil and vinegar.
