Bresaola, Onion And Rocket Salad
Ingredients
2 onions
75-90ml/5-6 tbsp olive oil
Juice of 1 lemon
12 thin slices bresaola
50-75g/2-3oz rocket
Salt and black pepper

Method
Slice each onion into eight wedges through the root.
Arrange the onion wedges in a single layer on a grill rack or in a flameproof dish. Brush them with a little of the olive oil and season well with salt and pepper.
Place the onion wedges under a hot grill and cook them for about 8-10 minutes, turning once, until they are just beginning to soften and turn golden brown at the edges.
Meanwhile, make the dressing: mix together the lemon juice and 60ml/4 tbsp of the olive oil in a small bowl. Add a little salt and black pepper and whisk well until the dressing is thoroughly blended.
If you have grilled the onions on a grill rack, then transfer them to a shallow dish once they are cooked.
Pour about two thirds of the dressing over the onion wedges and leave to cool.
When the onions are cold, arrange the bresaola slices on individual serving plates with the onions and rocket. Spoon over the remaining dressing and serve at once.
