Peasant Girl In A Veil
Ingredients
2 lb ripe red plums
4 oz granulated sugar
8 tablespoons white breadcrumbs
2 oz butter
A little caster sugar
¼ pint double cream
1 egg white
Method
Set oven at 350°F or Mark 4. Wipe the plums, split and remove stones. Lay plums in an ovenproof dish and sprinkle thickly with sugar, cover and cook in preset moderate oven for 35-40 minutes until soft. Allow to cool.
Fry the crumbs in butter until brown, scattering with a little caster sugar. Lay the plums, free from juice, in a glass dish or bowl in layers with the crumbs. Whisk the cream until partially whipped. Whisk egg white until it stands in peaks and fold into the cream. Spread over plums and chill before serving.
