Orange-Pear Relish
Ingredients
(500 ml) JARS
FOR ABOUT FOUR 2-CUP:
1½ lb (750 g) oranges (4 or 5)
1 lemon
1½ lb (750 g) pears (4 or 5)
1½ onions (about 1 cup/250 ml/150 g finely chopped)
2½ tbsp (37 ml/20 g) fresh ginger
¼ cup (50 ml/50 g) sugar
1 tsp (5 ml) liquid sweetener
1 tsp (5 ml) salt
¾ cup (175 ml) white-wine vinegar
1 small cinnamon stick
½ tsp (2 ml) mustard powder
2 tsp (10 ml) mild Madras curry powder
Method
Peel the oranges, lemon and pears. Cut the citrus fruit in half crosswise and remove the pits. Core the pear. Finely dice the fruit.
Finely chop the onions and peeled ginger. Stir into the fruit. Stir in the sugar, sweetener, salt, vinegar, cinnamon, mustard and curry powder. Cover and bring to a boil.
Cook, partly covered, on low heat for 1½ hours, stirring occasionally. Fill clean jars that close with firm clamps, or screw-top preserving jars, and seal immediately. Stand upside down for 15 minutes, then turn upright and leave to cool.
