Russian Tea Biscuits
Pechen'ye Chainoye
The Russians have a notoriously sweet tooth, and even a cup of tea must be accompanied by jam at the very least. Happily, this craving for sweets has produced a wonderful variety of tea biscuits and cakes.
Ingredients
Makes 3 dozen small biscuits.
2 oz (60 g) unsalted butter
Pinch of salt
4 oz (120 g) sugar
½ teaspoon baking powder
1 egg
¼ teaspoon mace
½ teaspoon vanilla essence
⅛ teaspoon ground coriander
4 oz (120 g) plain flour
Candied orange peel
Method
Preheat the oven to 190°C/375°F/Gas 5. Cream the butter and sugar together until light and fluffy. Beat in the egg and the vanilla essence.
Sift together the dry ingredients and add them to the butter mixture, mixing well.
Drop by scant teaspoonfuls on to lightly greased and floured baking trays. Top each biscuit with a piece of candied orange peel, pressing down lightly to flatten the biscuit. Bake for 8 to 10 minutes, until lightly browned.
