Thai Beef Salad
A hearty salad of beef, laced with a chilli and lime dressing.
Ingredients
75g/3oz lean sirloin steaks
1 red onion, finely sliced
½ cucumber, finely sliced into matchsticks
1 lemon grass stalk, finely chopped
30ml/2 tbsp chopped spring onions
Juice of 2 limes
15-30ml/1-2 tbsp fish sauce
2-4 red chillies, finely sliced, to garnish
Fresh coriander, Chinese mustard cress and mint leaves, to garnish

Method
Grill the sirloin steaks until they are medium-rare, then allow to rest for 10-15 minutes.
When cool, thinly slice the beef and put the slices in a large bowl.
Add the sliced onion, cucumber matchstick and lemon grass.
Add the spring onions. Toss and season with lime juice and fish sauce. Serve at room temperature or chilled, garnished with the chillies, coriander, mustard cress and mint.
COOK'S TIP:- Rump or fillet steaks would work just as well in this recipe. Choose good-quality lean steaks and remove and discard any visible fat.
