Boiled Beef With Horseradish Sauce

Ingredients

1 kg shin beef or brisket
2 small hot red chillies
1 teaspoon whole black peppercorns
6 potatoes, peeled
2 carrots, scraped
1 turnip, peeled
1 parsnip, scraped
50 g grated horseradish
2 tablespoons sour cream

Details

Serves: 5


Method

1. Place meat in a saucepan with enough water to cover.


2. Add chillies and peppercorns and bring to the boil. Cover and simmer for 2 hours.


3. Halve potatoes, carrots, turnip and parsnip. Add to meat and cook for about 30 minutes until tender.


4. Remove meat and vegetables from stock. Slice meat and garnish with vegetables.


5. To serve add horseradish to sour cream with a little stock and pour over individual servings of meat.
