Concertina Garlic Potatoes

With a low fat topping these would make a superb meal in themselves or could be enjoyed as a nutritious accompaniment to grilled fish or meat.

Ingredients

4 baking potatoes
2 garlic cloves, cut into slivers
60ml/4 tbsp low fat fromage frais
60ml/4 tbsp low fat natural yogurt
30ml/2 tbsp snipped chives
6-8 watercress sprigs, finely chopped (optional)

Method

Preheat the oven to 200°C/400°F/Gas 6. Slice each potato at about 5mm/¼in intervals, cutting not quite to the base, so that they retain their shape. Slip the slivers of the garlic between the cuts in the potatoes.


Place the garlic-filled potatoes in a roasting tin and bake for 1-1¼  hours or until soft when tested with a knife. Meanwhile, mix the low fat fromage frais and yogurt in a bowl, then stir in the snipped chives, along with the watercress, if using.


Serve the baked potatoes on individ­ual plates, with a dollop of the yogurt and fromage frais mixture on top of each.

COOK'S TIP:- The most suitable potatoes for baking are of the floury variety. Some of the best include Estima, Cara and Kerr's Pink.
