Turkey And Pasta Bake
Ingredients
275g/10oz minced turkey
150g/5oz smoked turkey rashers, chopped
1-2 garlic cloves, crushed
1 onion, finely chopped
2 carrots, diced
30ml/2 tbsp tomato purée
300ml/½ pint/1¼ cups chicken stock
225g/8oz rigatoni or penne pasta
30ml/2 tbsp grated Parmesan cheese
Salt and black pepper

Method
Brown the minced turkey in a nonstick saucepan, breaking up any large pieces with a wooden spoon, until well browned all over.
Add the chopped turkey rashers, garlic, onion, carrots, purée, stock and seasoning. Bring to the boil, cover and simmer for 1 hour until tender.
Preheat the oven to 180°C/350°F/Gas 4. Cook the pasta in a large pan of boiling, salted water according to the packet instructions, until al dente. Drain thoroughly and mix with the turkey sauce.
Transfer to a shallow ovenproof dish and sprinkle with grated Parmesan cheese. Bake for 20-30 minutes until lightly browned on top.
COOK'S TIP:- Minced chicken or extra lean minced beef work just as well in this tasty recipe.
