Tzatziki

Tzatziki is a Greek cucumber salad dressed with yogurt, mint and garlic. It is typically served with grilled lamb and chicken, but is also good served with crudités.

Ingredients

1 cucumber
5ml/1 tsp salt
45ml/3 tbsp finely chopped fresh mint, plus a few sprigs to garnish
1 garlic clove, crushed
5ml/1 tsp caster sugar
200ml/7fl oz reduced fat Greek-style yogurt
Cucumber flower, to garnish (optional)

Method

Peel the cucumber. Reserve a little of the cucumber to use as a garnish if you wish and cut the rest in half lengthways. Remove the seeds with a teaspoon and discard. Slice the cucum­ber.thinly and combine with salt. Leave for approximately 15-20 minutes. Salt will soften the cucumber and draw out any bitter juices.


Combine the mint, garlic, sugar and yogurt in a bowl, reserving a few sprigs of mint as decoration.


Rinse the cucumber in a sieve under cold running water to flush away the salt. Drain well and combine with the yogurt. Decorate with cucumber flower and/or mint. Serve cold.

COOK'S TIP:- If you want to prepare Tzatziki in a hurry, then leave out the method for salting cucumber at the end of step 1. The cucumber will have a more crunchy texture, and will be slightly less sweet.
