Chicken Cherry Salad
A cool, light, main-dish salad. To avoid staining your hands when pitting fresh cherries, wear latex or thin rubber gloves or place your hands inside a large plastic food bag and use as gloves. Serve with crusty bread and a cold drink.
Ingredients
1 cup (170 g) cubed cooked chicken
½ cup (75 g) pitted fresh Bing cherries
½ cup (85 g) green seedless grapes
1 apple, cored and sliced
1 cucumber, peeled and sliced
½ cantaloupe, peeled and cubed
¼ head lettuce, torn into bite-size pieces
Yogurt-Cucumber Dressing
Details
Serves: 4
Method
Chill all ingredients. Combine in a large bowl and toss with dressing. Spoon onto serving plates.
