Couscous Fruit Salad
if you haven't tried couscous, you'll find it quick to prepare. Combine it with tropical fruits and spices for a hearty salad that can be served warm or cold.
Ingredients
1¼ cups (300 ml) pineapple-orange juice
¼ teaspoon ground cinnamon
¼ teaspoon ground mace
1 cup (185 g) couscous
1 cup (200 g) drained canned pineapple chunks
1 banana, sliced
2 teaspoons lemon juice
½ avocado, peeled, pitted and chopped
3 tablespoons chopped almonds, toasted

Serves: 6
Method
Place pineapple-orange juice, cinnamon and mace in a 1-quart (1-liter) nonstick saucepan; heat until boiling. Stir in couscous. Cover and remove from heat. Let stand 5 minutes. Spoon in pineapple chunks. Pour mixture into a serving bowl. Top with banana slices. Sprinkle banana slices with lemon juice. Top with avocado and almonds.
