Cucumber-Tomato Salad
Pretty layers of red and green are topped by the crunch of sunflower seeds. Try zucchini in place of the cucumber.
Ingredients
1 cucumber, thinly sliced
1 red onion, thinly sliced
2 tomatoes, thinly sliced
2 tablespoons olive oil
1 tablespoon wine vinegar or apple cider
2 tablespoons lemon juice
¼ teaspoon garlic powder
¼ teaspoon dill weed
1 tablespoon chopped fresh basil or 1 teaspoon dried leaf basil
2 teaspoons unsalted sunflower seeds, toasted

Serves: 4
Method
In a salad bowl, alternate slices of cucumber, red onion and tomatoes. In a cup, blend oil, vinegar or cider, lemon juice, garlic powder, dill weed and basil. Pour over cucumber mixture and sprinkle with sunflower seeds. Cover and chill before serving.
