Artichoke Bisque
A different combination of subtle flavors.
Ingredients
1 tablespoon olive oil
½ cup (55 g) chopped onion
1 tomato, chopped
1 cup (80 g) sliced fresh mushrooms
1 (10-ounce/280-g) package frozen artichokes, thawed and chopped
1 cup (250 ml) low-sodium chicken broth
1 cup (250 ml) water
½ cup (55 g) frozen green peas
3 tablespoons all-purpose flour
1 tablespoon cornstarch
2 cups (500 ml) evaporated skimmed milk
Salt and black pepper to taste

Method
In a 3-quart (3-liter) nonstick saucepan, heat oil and sauté onion until softened, not browned. Add tomato, mushrooms, artichokes, broth and water. Cook about 5 minutes or until tender. Add peas. Blend flour and cornstarch with evaporated milk; add to soup and cook 5 to 7 minutes or until slightly thickened. Season with salt and pepper.
