Beef Barley Soup
Sweet potatoes bring a different taste to this hearty dish.
Ingredients
1 pound (450 g) boneless short ribs or beef shank, cubed
3 cups (750 ml) low-sodium beef broth
3 cups (750 ml) water
1 onion, chopped
1 cup (140 g) chopped peeled sweet potato
2 celery stalks, chopped
3 tomatoes, chopped
½ teaspoon ground cumin
⅓ cup (55 g) pearl barley
2 tablespoons chopped fresh parsley
Salt and black pepper to taste

Method
Brown beef cubes in a 5-quart (5-liter) nonstick Dutch oven over medium heat. Add broth, cover, and cook 25 minutes. Add remaining ingredients. Cover and simmer about 1 hour or until barley and vegetables are tender.
