Butternut Squash And Apple Soup
A pretty soup that combines two fall favorites, apples and squash.
Ingredients
½ cup (55 g) chopped roasted yellow or orange bell pepper
2 pounds (900 g) butternut squash, peeled, seeded and cut into 1-inch (2.5-cm) pieces
½ cup (115 g) chopped onion
2 green apples (340 g), peeled and chopped (2 cups)
2 cups (500 ml) low-sodium chicken broth
1 cup (250 ml) unsweetened apple juice
1 cup (250 ml) water
1 teaspoon grated fresh ginger
¼ teaspoon ground mace
¼ teaspoon ground nutmeg
2 tablespoons chopped almonds, for garnish
Details
Serves: 8
Method
In a large pot, combine all ingredients except almonds. Cover and cook until vegetables are tender. Purée mixture in batches in a food processor or blender. Reheat and serve garnished with almonds.
