Confetti Corn Chowder
Bright colors and flavors abound in this chowder.
Ingredients
2 bacon strips, chopped
2 green onions, including tops, chopped
1 celery stalk, chopped
2 (14-ounce/400-g) cans low-sodium cream-style corn
1 tablespoon chopped pimiento
1 cup (250 ml) low-sodium chicken broth or water
1½ cups (375 ml) low-fat milk
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
Salt and black pepper to taste

Serves: 6
Method
Sauté bacon in a 3-quart (3-liter) nonstick saucepan. Stir in green onions and celery. Add remaining ingredients except salt and pepper and simmer, uncovered, 15 to 20 minutes. Season with salt and pepper.
