Yogurt Cake With Fresh Figs

Ingredients

1 cup (250 ml/250 g) yogurt
2 eggs
¼ cup (50 ml) sugar
1 vanilla bean
Salt
1 tsp (5 ml) grated orange zest
1 tbsp (15 ml) rum
¼ cup (50 ml/60 g) melted cooled butter
1⅓ cups (325 ml/250 g) durum wheat semolina
1½ tsp (7 ml) baking powder
Fine dry bread crumbs
6 ripe fresh figs

Method

Preheat the oven to 325°F (160°C). Split the vanilla bean lengthwise and scrape out the seeds. Mix yogurt, eggs, sugar, vanilla seeds, a pinch of salt, orange zest, rum and butter. Combine the semolina and baking powder and stir into the mixture.


Grease a 10 inch (25 ml) springform pan and sprinkle with bread crumbs. Pour in the batter. Quarter the figs, lay them on top and let them sink into the batter. Bake for 45 to 50 minutes, until golden. Leave to cool in the pan, then remove and cut into 12 pieces.

TIP:- Replace the fresh figs with dried ones. Before using, soak for 1 hour in water or a little more rum, then drain, blot dry and cut into quarters.
