Crisp Catfish Fillets

It may be hard to believe, but it is possible to have a crisp coating without frying.

Ingredients

1 pound (450 g) skinless catfish fillets
½ cup (120 ml) evaporated skimmed milk
⅓ cup (55 g) cornmeal
¼ teaspoon cayenne pepper
1 teaspoon dried leaf thyme
1 teaspoon dried leaf oregano
¼ teaspoon garlic powder

Method

Preheat oven to 400°F (200°C). Lightly spray a baking dish with vegetable cooking spray. Rinse fillets and pat dry. Set aside. Pour evaporated milk into a shallow dish or pie plate. In another dish, combine cornmeal, cayenne, thyme, oregano, and garlic powder. Dip each fillet in milk, then in cornmeal mixture. Place in prepared baking dish. Bake 10 to 12 minutes or until golden brown and fish flakes.
