Pasta With Clam And Tomato Sauce

Try this Sicilian favorite for your next pasta meal. Best of all, it's ready in less than 30 minutes.

Ingredients

2 teaspoons olive oil
1 garlic clove
¼ onion, chopped
¼ green bell pepper, chopped
2 teaspoons grated lemon zest
2 teaspoons chopped fresh parsley
½ teaspoon dried leaf oregano
1 large tomato, seeded and chopped
3 tablespoons lemon juice
1 (6-ounce/170-g) can clams
½ cup (70 g) frozen green peas
8 ounces (230 g) ziti, cooked
4 teaspoons grated low-sodium Parmesan cheese

Method

In a medium nonstick skillet, heat oil. Add garlic, onion, and bell pepper and sauté about 3 minutes until softened, not browned. Stir in lemon zest, parsley, oregano, tomato, and lemon juice. Reduce heat; add clams with juice. Cover and simmer 15 minutes. Add peas and cook 5 minutes. Serve over cooked pasta and sprinkle with Parmesan cheese.
