Broiled Cod

Scallops, sea bass, or shrimp can be substituted for cod.

Ingredients

1 (12-ounce/375 ml) can beer
¼ teaspoon red pepper flakes
½ teaspoon dry mustard
1 tablespoon lime juice
2 green onions, chopped
¼ teaspoon paprika
½ to ¾ pound (230 to 340 g) cod fillets

Method

In a baking dish, mix beer, red pepper flakes, mustard, lime juice, green onions, and paprika. Add cod; marinate 3 to 4 hours, covered and refrigerated. Preheat broiler to 450°F (230°C) or high. Spray broiler pan with vegetable cooking spray and arrange fillets in a single layer. Broil 7 to 10 minutes or until fish flakes. Turn at least once, brushing with more marinade if necessary. Serve at once.
