Denver Scramble
For variety, serve this in a split pita pocket or wrap it in a flour tortilla.
Ingredients
¼ onion, chopped
1 celery stalk
¼ green bell pepper
2 eggs
2 egg whites
¼ teaspoon dried leaf basil or parsley
Chili powder to taste

Method
Spray a nonstick skillet with vegetable cooking spray. Heat skillet and add onion, celery and bell pepper. Sauté until softened. Add eggs, egg whites and basil or parsley to skillet. Stir quickly, moving all uncooked areas, until eggs are done as desired. Sprinkle with chili powder.
