Greek Salad
Serve with crusty French bread. The Greeks dip the bread into the dressing rather than butter it.
Ingredients
3 tomatoes, chopped
2 cucumbers, sliced
½ green bell pepper, seeded and sliced
½ onion, chopped
4 radishes, sliced
1 tablespoon chopped capers
½ teaspoon dried leaf oregano
2 tablespoons wine vinegar
2 tablespoons olive oil
1 ounce (30 g) feta cheese, crumbled
12 black Greek olives
Lettuce leaves, torn into bite-size pieces

Serves: 4
Method
In a large bowl, combine tomatoes, cucumbers, bell pepper, onion and radishes. Mix together capers, oregano, vinegar and oil. Pour over mixture and toss. Chill before serving. Spoon mixture onto lettuce leaves, top with cheese and garnish with olives. Serve with crusty French bread.
