Corned Beef And Cabbage

Whether you serve it hot or chilled, this is an ideal dish for your next party.


3 to 3 pounds (1.8 kg) brisket of beef
1 (10-ounce/280-g) package frozen boiling onions
3 carrots, sliced
1 medium head green cabbage, cut into wedges


3 garlic cloves
3 tablespoons pickling spice
1 onion, sliced
2 bay leaves
6 cloves
10 whole black peppercorns
1 cup (250 ml) apple juice


Serves: 10


Trim all visible fat from beef. Place in a large mixing bowl with marinade. Cover and marinate overnight. Transfer beef and marinade to a large pot, cover with water, and bring to a boil; reduce heat. Cover and simmer until beef is tender, about 3 hours. Remove beef and let stand 15 minutes. Slice and keep warm. Discard bay leaves and whole spices. Add onions, carrots and cabbage to pot. Cover and cook until tender. Serve vegetables with beef.
