Method

Step 1

Bring a large saucepan of water to the boil and add the ziti with a dash of olive oil.

Cook for about 10 minutes, stirring occasionally, until tender. Drain and set aside. Preheat the oven to 200°C/400°F/Gas Mark 6.

Step 2

Melt the butter in a large frying pan and sauté the onion, garlic and thyme for about 3 minutes, until softened.

Add the chopped red cabbage, sultanas and pine nuts and season to taste with salt and freshly ground black pepper.

Cover and cook for 10 minutes, stirring occasionally, until the cabbage has softened.

Step 3

Stir in the ziti then transfer the mixture to a shallow ovenproof dish. Top with the grated Cheddar cheese and bake for about 20 minutes, until golden. Serve immediately.
