Orange Chicken Casserole
Serve with fresh asparagus or green beans.
Ingredients
1 cup (140 g) uncooked long-grain white rice
½ cup (120 ml) low-sodium chicken broth
1½ cups (375 ml) orange juice
2 tablespoons dried currants
2 tablespoons chopped pistachios
¾ pound (340 g) skinned and boned chicken breasts
½ cup (115 g) plain nonfat yogurt
½ teaspoon dried leaf tarragon
Paprika
1 (11-ounce/310-g) can Mandarin oranges, drained

Method
Preheat oven to 350°F (175°C). Spread rice evenly over bottom of a 2-quart (2-liter) baking dish. Combine chicken broth, orange juice, currants and pistachios in a small mixing bowl. Pour over rice. Place chicken breasts on top. Brush chicken with yogurt. Sprinkle with tarragon and paprika. Cover and bake about 30 minutes; uncover, add Mandarin oranges, and continue baking about 15 minutes or until chicken is done.
