Grilled Chile Chicken

Perk up the flavor of chicken with a true taste of the Southwest.

Ingredients

2 tablespoons lemon juice
½ teaspoon dried leaf oregano
¼ teaspoon paprika
1 pound (450 g) skinned and boned chicken breasts
2 teaspoons canola oil
¼ cup (30 g) chopped onion
1 garlic clove, chopped
1 roasted green chile, peeled and chopped
1 tomato, chopped
3 ounces (85 g) part-skim mozzarella cheese, thinly sliced
1 tablespoon chopped fresh cilantro

Method

Mix lemon juice, oregano and paprika. Pour over chicken, turning pieces to coat; refrigerate 1 hour or more. Preheat broiler. Heat oil in a small nonstick skillet. Add onion and garlic; sauté until softened, not browned. Add chiles and tomatoes, and cook 3 to 4 minutes; cover and set aside. Broil chicken pieces on both sides until done. Remove broiler pan, lay cheese slices on top of chicken, and spoon chile mixture over all. Return to broiler until cheese melts. Sprinkle with cilantro and serve at once.
