Chicken With Peaches
Nectarines can be substituted for peaches in this dish, which features an unusual combination of flavors.
Ingredients
1 tablespoon canola oil
½ onion, chopped
1 pound (450 g) skinned and boned chicken pieces
½ teaspoon garlic powder
1 (6-inch/15-cm) stalk lemongrass
2 cups (500 ml) passion fruit juice
¼ teaspoon chili powder
1 tablespoon cornstarch
2 large peaches, peeled, pitted and sliced
4 teaspoons chopped fresh cilantro or parsley, for garnish

Method
Heat oil in a medium nonstick skillet. Add onion and sauté until softened, not browned. Add chicken and lightly brown on all sides. Sprinkle with garlic powder. Crush thick end of lemongrass and add to pan. Pour in 1 cup (250 ml) passion fruit juice and add chili powder. Reduce heat, cover, and cook over medium heat about 15 minutes. Dissolve cornstarch in remaining cup of passion fruit juice. Stir into skillet and cook until slightly thickened. Add peach slices. Cook about 5 minutes. Remove lemongrass. Serve chicken topped with peaches and sauce. Garnish with chopped cilantro.
