Baked Rosemary Chicken
Serve hot for an evening meal, or chill and take along for a superb picnic.
Ingredients
2 pounds (900 g) chicken pieces, skinned
½ cup (7 g) crushed shredded wheat cereal
1 teaspoon crushed dried leaf rosemary
1½ teaspoons paprika
1 tablespoon grated orange zest
1 teaspoon dried leaf oregano
¾ cup (180 ml) evaporated skimmed milk

Method
Preheat oven to 375°F (190°C). Spray a baking sheet with vegetable cooking spray. Remove all visible fat from chicken. Combine cereal, rosemary, paprika, orange zest and oregano in a pie plate or small paper bag. Pour evaporated milk into another pie plate. Dip each chicken piece into milk and then into cereal mixture. Place coated pieces on prepared baking sheet. Bake 30 to 40 minutes.
