Brown Rice And Fruit
Both dried and fresh fruits combine nicely with the nutty flavor of brown rice.
Ingredients
2 cups cooked brown rice (¾ cup/100 g uncooked)
2 tablespoons almonds, toasted
4 dried figs, chopped
1 celery stalk, chopped
1 cup (170 g) seedless red grapes
½ cup (115 g) orange low-fat yogurt
¼ cup (60 ml) orange juice
1 orange, peeled and segmented
1 tablespoon chopped fresh mint (optional)

Serves: 6
Method
In a large bowl, toss together rice, almonds, figs, celery and grapes. In a cup, stir together yogurt and orange juice. Pour over rice mixture and stir to combine. Garnish with orange segments and fresh mint if desired. Cover and refrigerate until chilled.
