Deviled Turkey Pita Pockets
This filling can serve as a salad as well as a sandwich.
Ingredients
1 cup (170 g) chopped cooked turkey
¼ cup (30 g) chopped celery
1 green onion, chopped
2 tablespoons chopped sweet pickle
1 tablespoon chopped pimiento
½ teaspoon prepared horseradish
½ teaspoon Dijon-style mustard
2 tablespoons plain nonfat yogurt
4 whole wheat pita bread pockets
12 cherry tomatoes, halved
1 cucumber, sliced
4 lettuce leaves, shredded

Method
In a small mixing bowl, combine turkey, celery, green onion, pickle, pimiento, horseradish, mustard and yogurt. Cut pitas in half, open pocket, and fill with turkey mixture, cherry tomatoes, cucumber and lettuce.
