Chicken In Salsa Verde

Fresh tomatillos resemble green tomatoes but have a papery husk. If you can't find fresh tomatillos, the canned variety is a fine substitute.

Ingredients

2 teaspoons canola oil
1 pound (450 g) skinned and boned chicken pieces
½ onion, chopped
1 garlic clove, minced
1 pound (450 g) fresh or 1 (12-ounce/340-g) can tomatillos, drained
3 whole roasted green chilies, peeled and chopped
½ cup (120 ml) apple juice
1 tablespoon chopped fresh cilantro

Method

Spray a large nonstick skillet with vegetable cooking spray. Heat oil and sauté chicken on all sides until lightly browned. Add onion and garlic, stirring until limp. Add remaining ingredients. Reduce heat, cover, and simmer about 20 minutes.
