Chocolate Mocha Pudding
This pudding is so rich and creamy, you'll never believe it's sin-free.
Ingredients
½ cup (120 ml) warm brewed coffee
¼ cup (57 g) fructose granules
2 tablespoons cornstarch
3 tablespoons unsweetened cocoa powder
1 cup (250 ml) fat-free milk
1 (12-ounce/375-ml) can evaporated skimmed milk
½ cup (120 ml) egg substitute
1 teaspoon vanilla extract

Serves: 6
Method
In a saucepan, combine coffee, fructose, cornstarch and cocoa powder; stir until well blended. Stirring constantly, slowly pour in fat-free milk, evaporated milk and egg substitute. Continue stirring while cooking over medium heat until bubbling and thickened, about 7 minutes. Remove from heat; stir in vanilla. Pour into serving dishes.
