Date-Pecan Bread Pudding

Turn plain leftover bread into a sensational dessert.

Ingredients

2 cups (500 ml) fat-free milk
1 cup (250 ml) egg substitute
2 tablespoons margarine, melted
¼ cup (55 g) sugar
2 teaspoons orange extract
3 cups (100 g) cubed French bread
⅓ cup (55 g) chopped dates
¼ cup (30 g) chopped pecans
1 teaspoon ground cinnamon

Method

Preheat oven to 325°F (165°C). Spray a 6-cup (1.5-liter) baking dish with vegetable cooking spray. In a large bowl, beat together milk, egg substitute, margarine, sugar and orange extract. Add bread cubes, dates and pecans; mix together until all bread cubes are moistened. Pour into prepared baking dish. Sprinkle with cinnamon. Place a large baking pan on lower oven rack. Place baking dish in pan and add 1 inch (2.5 cm) water to larger pan. Bake about 45 minutes. Serve warm or cold.
