Granola

This crunchy mixture can be enjoyed in many ways, as a breakfast cereal, as a snack, or as a topping on fruit or yogurt.

Ingredients

2 cups (160 g) old-fashioned rolled oats
1 cup (30 g) wheat flakes
¼ cup (20 g) unsweetened flaked coconut
¼ cup (30 g) sliced almonds
¼ cups (30 g) dried currants
¼ cup (30 g) chopped dried apricots
¼ cup (60 ml) honey
¼ cup (60 ml) canola oil
½ teaspoon vanilla extract

Method

Preheat oven to 325°F (165°C). Line a 13 x 9-inch (33 x 23-cm) baking pan with foil. In a large bowl, combine oats, wheat flakes, coconut, almonds, currants and apricots. In a cup, blend honey, oil and vanilla. Drizzle over dry mixture and stir to coat. Spread mixture evenly in baking pan. Bake 15 to 20 minutes, stirring several times until toasted. Cool and store in a covered container.
