Old-Fashioned Potato Salad
A yogurt dressing gives this familiar salad extra tang.
Ingredients
3 cups (12 ounces) cooked new potatoes
¼ cup (30 g) chopped celery
2 tablespoons chopped green olives
½ cup (55 g) green peas, cooked
¼ cup (30 g) chopped green onion
½ teaspoon chopped fresh dill
1 tablespoon chopped fresh parsley
2 tablespoons lemon juice
2 tablespoons nonfat mayonnaise
⅓ cup (85 g) plain nonfat yogurt
2 tablespoons chopped fresh chives
1 sprig fresh dill, for garnish
Black pepper to taste
Details
Serves: 4
Method
Slice potatoes and place in a large bowl. Add remaining ingredients except dill sprig; toss gently to combine. Garnish with dill sprig. Serve warm or cold.
