Mediterranean Salad

Cooking spray provides an easy way to add just a touch of oil to your salad.

Ingredients

1 large tomato, seeded and diced
1 large green bell pepper, seeded and diced
1 large cucumber, seeded and diced
6 radishes, diced
12 pitted small green olives
1 tablespoon chopped fresh parsley
2 teaspoons red wine vinegar
½ teaspoon black pepper
Bibb lettuce

Details

Serves: 6


Method

Combine tomato, bell pepper, cucumber, radishes, olives and parsley in a large bowl. Spray with olive oil cooking spray. Mix well. Sprinkle vegetables with vinegar and black pepper. Toss well. Chill about 1 hour. Serve over lettuce leaves.
