Three Bell-Pepper Salad
You can enjoy wonderful color as well as flavor with this great salad. If desired, top with a spoonful of dressing.
Ingredients
1 cup (230 g) canned black soybeans, rinsed and drained
1 red bell pepper, seeded and julienned
1 yellow or orange bell pepper, seeded and julienned
1 green bell pepper, seeded and julienned
2 green onions, chopped
1 cup (85 g) sliced fresh mushrooms
1 tablespoon chopped fresh basil or 1 teaspoon dried leaf basil
1 tablespoon pumpkin seeds, toasted
Spinach or romaine lettuce leaves

Serves: 4
Method
In a bowl, toss together all ingredients except spinach leaves and pumpkin seeds. Line salad plates with spinach or romaine lettuce leaves. Place bell pepper mixture on top of leaves. Sprinkle with pumpkin seeds.
