Soft Chicken Tacos
No frying needed. For authentic south-of-the-border tacos, just heat and fill soft corn tortillas.
Ingredients
2 teaspoons canola oil
¼ onion, chopped
1 cup (170 g) chopped cooked chicken
8 corn tortillas
1 cup (230 g) Tomato Salsa
½ cup (55 g) shredded low-fat Monterey Jack cheese
1 cup (70 g) shredded lettuce
12 radishes, sliced

Method
In a 2-quart (2-liter) nonstick saucepan, heat oil and sauté onion until softened, not browned. Add chicken, cover, and heat through. Warm tortillas in oven or microwave oven. Spoon chicken mixture on each tortilla and top with salsa, cheese, lettuce and radishes. Fold in half and serve.
