Apple-Blackberry Cobbler

Today old-fashioned cobblers are enjoying a revival, regularly appearing on restaurant menus.

Ingredients

Topping:

½ cup (70 g) all-purpose flour
½ cup (40 g) quick-cooking rolled oats
¼ cup (40 g) brown sugar
4 tablespoons margarine, melted
½ teaspoon ground cardamom
¼ cup (30 g) chopped walnuts

Filling:

1½ pounds (675 g) Granny Smith apples (5 to 6), peeled, cored and sliced
1 cup (145 g) fresh or frozen blackberries
2 tablespoons quick-cooking tapioca
1 tablespoon lemon juice
1 teaspoon almond extract

Method

Preheat oven to 425°F (220°C). Spray a 9-inch (23-cm) square baking dish with vegetable cooking spray. In a medium bowl, combine topping ingredients until mixture is crumbly; set aside. In a large bowl, toss filling ingredients until apples and blackberries are coated. Carefully spoon into prepared baking dish. Sprinkle topping evenly over filling and bake about 25 minutes. Serve warm or cold.
