Curried Halibut Steaks
The steaks can be poached ahead of time and broiled just before serving.
Ingredients
1 quart (1 l) water
3 slices fresh ginger
2 slices lemon
¼ cup (60 ml) dry vermouth
2 tablespoons chopped celery leaves
1 pound (450 g) halibut steaks, about 1 inch (2.5 cm) thick
⅓ cup (85 g) plain nonfat yogurt
3 tablespoons nonfat mayonnaise
½ teaspoon dill weed
2 teaspoons minced fresh chives
¼ teaspoon black pepper
1 teaspoon curry powder

Method
In a large saucepan or fish cooker, combine water, ginger, lemon slices, vermouth, and celery leaves. Bring to a simmer. Add halibut steaks; cover and simmer 4 minutes or until barely done. With slotted spoon or spatula, carefully lift fish out of water; place on a broiler pan. At this point, you can cover and refrigerate halibut until needed. Preheat broiler. In a small bowl, combine yogurt, mayonnaise, dill weed, chives, pepper, and curry powder. Spread over top of each steak. Broil 5 to 6 inches (13 to 15 cm) from heat source until bubbly and golden on top. Garnish with lemon wedges.
