Mahi Mahi With Tomatoes
Hawaiians introduced us to this delicious, meaty fish from the Pacific.
Ingredients
2 teaspoons olive oil
1 onion, chopped
2 garlic cloves, chopped
3 tomatoes, chopped
1 roasted green chile, peeled, seeded, and chopped
3 tablespoons chopped fresh parsley
1 pound (450 g) mahi mahi or cod, cut into 1-inch (2.5-cm) cubes
2 tablespoons sliced toasted almonds

Method
In a medium nonstick skillet, heat oil. Add onion and garlic and sauté until softened, not browned, about 3 minutes. Add tomatoes, chile, and parsley. Cook together 3 to 4 minutes. Add fish cubes, cover, and cook 10 minutes. Sprinkle with almonds.
