Broiled Fresh Pineapple Rings
Enjoy this simple dish as dessert or for brunch.
Ingredients
1 medium fresh pineapple, peeled and sliced into 8 to 10 rounds
2 tablespoons margarine, melted
¼ cup (60 ml) rum (optional)
4 tablespoons granulated brown sugar substitute
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Method
Preheat broiler or grill. Place pineapple rounds on a broiler pan or grill rack. Brush with margarine and rum, if using; top with brown sugar substitute, cinnamon and nutmeg. Broil until bubbling and slightly browned. Serve at once.
