Salmon With Curry Sauce
Enjoy the delicate flavor of salmon topped with a mild curry sauce.
Ingredients
1 pound (450 g) salmon fillets
1 tablespoon canola oil
1 tablespoon chopped fresh chives
1 tablespoon curry powder
1 teaspoon dry mustard
¼ cup (60 ml) dry white wine
2 tablespoons lemon juice
1 tablespoon dried currants
1 teaspoon cornstarch
¾ cup (180 ml) evaporated skimmed milk

Method
Preheat broiler. Spray broiler pan with vegetable cooking spray. Rinse fillets and pat dry. Lightly spray with vegetable cooking spray and broil about 10 minutes per inch of fish. In a nonstick skillet, heat oil. Stir in chives, curry powder, and mustard. Blend thoroughly. Remove from heat; stirring constantly, add wine and lemon juice. Return to heat and add currants. Dissolve cornstarch in evaporated milk; stir into curry mixture until blended. Remove broiled fish to serving dishes and top with curry sauce. Serve at once.
