Cornmeal Rolls

Warm rolls add a special touch to any meal, and this no-yeast, no-rise version bakes in no time.

Ingredients

½ cup (85 g) cornmeal
1½ cups (310 g) all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup (60) egg substitute
¾ cup (170 g) plain nonfat yogurt

Method

Preheat oven to 425°F (220°C). In a medium mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda and salt. Add egg substitute and yogurt. Stir together to make a soft dough. Roll out to a ¼-inch (6-mm) thickness. Cut out 2-inch (5-cm) rounds. Fold each round in half. Bake on an ungreased baking sheet 15 minutes or until lightly browned.
