Creamed Spinach-Rice Soup

Add more curry powder if you like food a bit spicier.

Ingredients

1 tablespoon olive oil
½ onion, chopped
½ cup (85 g) chopped cooked chicken
4 cups (1l) low-sodium chicken broth
2 cups (500 ml) water
¼ cup (22 g) long-grain white rice
½ teaspoon curry powder
¼ teaspoon ground nutmeg
1½ cups (375 ml) evaporated skimmed milk
3 tablespoons all-purpose flour
½ (10-ounce/280-g) package frozen spinach
Salt and black pepper to taste

Method

Heat oil in a 5-quart (5-liter) nonstick Dutch oven. Sauté onion and add chicken, chicken broth, water, rice, curry powder and nutmeg. Cover and reduce heat; simmer 20 to 25 minutes. In a small bowl, blend evaporated milk and flour. Stir into soup mixture, add spinach, and cook until slightly thickened. Season with salt and pepper.
