Oatmeal Pancakes

For a change, top your pancakes with stewed apples or fresh fruit instead of syrup.

Ingredients

½ cup (40 g) old-fashioned rolled oats
1¼ cups (300 ml) reduced-fat buttermilk
¼ cup (60 ml) egg substitute, or 2 egg whites, lightly beaten
½ cup (70 g) all-purpose flour
½ cup (70 g) whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract

Method

Put oats in a medium mixing bowl and pour in buttermilk; stir and let stand 15 minutes. Beat in egg substitute or egg whites and remaining ingredients until well blended. Preheat a nonstick griddle. Spoon about ¼ cup (60 ml) batter for each pancake. Cook pancakes until bubbles appear and edges look slightly dry. Turn and continue cooking until lightly browned.
